User Dashboard should show the user uploaded videos and their status

Currently the user page is only showing dumb data, even after specific user made a video upload, we need to add:

1. The submitted videos that the user has uploaded (Or thumbnail of the videos)
2. The correct username of the user

@mhmdksh Wee need two endpoints for user

Post endpoint to create or update user info:
input -> (name?: string; walletAddress: string; ensName?: string; phone?: number; experience?: string)
output -> updated user fields

NOTE: I'm not sure what fields we need to save in user table. We need to talk about it with Jimmy (We may need other fields like trees planted and tokens claimed). But basically walletAddress should be required and other fields optional. In this request, if walletAddress already exists in DB, BE will update user info for that walletAddress (it's unique), if walletAddress doesn't exist in DB, BE will create a new user.

Get endpoint to fetch user info by walletAddress:
input -> walletAddress
output -> all user fields

I have also added the new /api/users endpoint with the below features:

  ✅ New User Endpoints Implemented

  1. POST /api/users - Create/Update User

  - Input: walletAddress (required), name, ensName, phone, experience (all optional)
  - Output: User object with action indicator (created/updated)
  - Logic: Upsert operation - creates new user if walletAddress doesn't exist, updates if it does

  2. GET /api/users/:walletAddress - Fetch User

  - Input: walletAddress in URL params
  - Output: Complete user profile data
  - 404 handling: Returns proper error if user not found

  - New User Model: Created with extensible schema including future fields like treesPlanted and tokensClaimed
  - Migration v1.3.0: Added users collection with proper indexes
  - Unique Constraint: walletAddress field is unique and indexed
  - Timestamps: Automatic createdAt and updatedAt tracking

  - UserService: Complete service layer with CRUD operations, stats tracking, and error handling
