[Jira] Update documentation

Jira dashboards were updated to support counting users depending on their participation in the issue: #378

However, documentation is only partially updated. We need to update:

• Screenshots: ensure all of them show the latest dashboard version.
• Information about author_type: it is the new field used for duplicating issues and counting users by type of participation.
