Update NLP example

Update natural_language_processing example. See #8 for general issue for updating notebooks. Checklist:

• replace esig/iisignature signature computation to roughpy
• check documentation and improve with docstrings, typehints where necessary
• update text to discuss use of roughpy (in README and in notebook itself)
• general tidy-up of notebook
