Unfortunately, due to #887, this is known not to work! (And is rather confusing if one is trying to work out how to turn profiling on.)
Is there some other common option to use as an example which haskell.nix does, in fact, read from cabal.project that we could use as an example instead?

Searching the docs for
profiling
only brings up one relevant section: Troubleshooting:Nix-only configuration options, where settingprofiling: true
incabal.project
is mentioned as better than doing the setting via nix, to "ensure that the two builds agree".(The relevant source is https://github.com/input-output-hk/haskell.nix/blame/master/docs/troubleshooting.md#L69)
