Why isn't search finding any releases?

This is completely depending on the naming quality of releases on the indexers you use. Ideal naming will contain:

• Studio name
• Release date, preferably in yyyy-mm-dd format, but the app does handle other formats
• Release title

Do I have to have one folder per scene/movie?

Yes. This version is originally based on Radarr, which requires the same.

Can I have multiple copies of the same video, like 4k and 1080p?

No, this isn't supported and isn't planned.
