[ENH] Rename intersection_polygon_polygon to intersect_polygons

**Describe the issue**
As per https://github.com/pyOpenSci/software-submission/issues/128#issuecomment-1995318832, the function `intersection_polygon_polygon` and all following functions should be renamed to start with the verb `intersect`

This issue relates to #292
