Switch the project build tooling from tsup to tsdown. Adds tsdown.config.ts (packages/ai-gateway-provider, packages/tanstack-ai renamed), removes tsup.config.ts, and updates package.json and lock files across demos and packages. Also includes dependency/dev-dependency bumps (notably TypeScript -> 6.0.2, Vite -> 8.0.3, agents, @modelcontextprotocol/sdk, partyserver, etc.), updated demos.json hashes, and a changeset documenting the change.
