Update list of Models available #3447

Epic domain
Our built-in LLM catalog is out of date, making it hard for users to discover and use current open-source models. This epic will refresh the catalog with a curated and updated list as well as clear model metadata (size, license, CPU/GPU support, quantization, runtime).
