Using a sequential colormap improves the plots at the end of the "N-dimensional Histogram" tutorial. The `nipy_spectral` colormap unfortunately distorts the visualization.

Hi, this small PR fixes the colormaps in the Array Display and Use N-dimensional Histogram functionality and Interpolation tutorials.
The latter especially benefits from a perceptually uniform sequential colormap like
inferno. In this particular case, I also changed the code for the plot to matplotlib's OOP interface.
