chore: update weaviate destination to use v4 client

Feature description

our weaviate destination is using their v3 client which has been replaced about a year ago with a more performant v4 client, which has among other, improved batching, proper typing and moves internal organization from classes to collections (under the hood its the same api-endpoints though, so it shouldnt be a breaking change.
