General IIIF Viewer Interaction Improvements PART 2

What?

With #302 and #303 merged, more work is pending. This is a stub to keep unifying the new IIIF Viewers interactions/new features built and make it work across al viewers.

Include:

• JSON based config for Mirador
• Rebuild (well this time) Text overlay Mirador from Johannes (proper react version)
• Add the ap: override per object too for OSD/Mirador
• Add the missing Page mode via Manifest for IAbook reader
