fix(matter): IDF 5.4 CI error with ESP_OpenThread Include

Description of Change

An IDF 5.4 ESP Matter + OpenThread CI failure seems to be related to finding proper Include Path.
The esp_matter_light example is outdated in favor of the ESP32 Arduino Matter Library.
It doesn't make sense to keep it, therefore, it will be removed by this PR.
