Elasticsearch Connector Updates

**Problem**
Our elasticsearch connector hasn't gotten a lot of usage and we consistently receive improvement requests for it:

**Requests (in order)**

- ~Set a "routing_field"~
- Set index.mapping.ignore_malformed
- Set the refresh interval
- Control which fields are indexed and which are not
- Support ddl in the way that other connectors do
- Control date formats
