[FR] Upgrade @google-cloud/firestore to 7.1

Current version of @google-cloud/firestore is 6.8. This causes that some highly requested features like server aggregated queries to not work, as is shown in #2374. This could be solved by updating @google-cloud/firestore to 7.1.
