Dockerfile HEALTHCHECK integration #36403

Feature Description
As suggested a while ago in Issue 12443, I would like to add a HEALTHCHECK to the Dockerfiles. A suitable endpoint was already merged in PR 18465, but never integrated into the Dockerfile. Right now, one has to search for the correct API endpoint, which is only listed in the Gitea Kubernetes Documentation.
The implementation is quite straightforward, see here.
