Move documentation of haskell-mode-hook into haskell-mode proper. define-derived-mode defines haskell-mode-hook that gets in conflict with defcustom haskell-mode-hook. Some Emacsen (notably Aquamacs) have issues with double defined variable and are not able to show the documentation properly nor use customize functionality.
