The initial MCP supported route was introduced as part of: #11034
The mcp gateway has evolved to include more AI data plane features (and recently renamed agent gateway).
The mcp guide is there with our initial approach (https://kgateway.dev/docs/mcp/), we should update the code and docs:
- Rename the resources to be generic (not MCP specific)
- Update docs with new supported features (A2A, etc.)
