Download lua from repository
Go to OBS, Tools, Scripts
Click plus icon, selected downloaded lua file
Input source name (exact from sources list), choose monitor (0 = default)

Go to OBS, preferences, Hotkeys, bind "Open fullscreen projector (Source)"

Now you can open your source with that keybind
