I noticed the publish workflow has been failing, and I'm not sure if it's because it was a temporary token that expired, but either way I set up a trusted publisher for this repo, which will use the GH actions OIDC token to authenticate.
At the same time, I figured it would be good to bump the checkout action to v7 across all workflows, because adds a nice security improvement in actions/checkout#2454
