Installation fails

I'm excited to try out MIMO CE but have been unable to launch the setup wizard from the email links, just get an 500 Internal Server error from nginx.

It appears the Lets Encrypt setup may not complete successfully, as when running in the foreground the 'Creating letsencrypt' 'Stopping letsencrypt' runs in a loop.

I'm running it on a fresh Digital Ocean Docker droplet,
Docker 18.09.6, Ubuntu 18.04

Slightly unrelated but if I run docker-compose down --rmi all, and re-run setup, there is an error
removing network mimo_default (has active endpoints).

I've attached the docker compose log, not sure if there are any other logs required.
