build: refactor maven module structure

This PR refactors the maven module structure;

• to introduce sink and source modules and splitting of kafka-connect-neo4j module into these,
• to introduce a new packaging module that's responsible for building packages using assembly plugin,
• removes the maven profile about guava and excludes it while building the packages for confluent platform.
