CI: CodeCov coverage, select only one source for coverage

In #2912 i realized that the coverage is flaky. This is because uploading from various test runs are not really supported by codecov.

codecov/codecov-action#40

I would say, that we should use the coverage from the combination ubuntu-latest with node 20.

Then it should stabilize.
