vault, docs,contrib: Update all plugins, and install 'Vault Nickname' plugin

Description

In the Tasks-Demo, docs and contributing vaults:

1. Update all plugins to the latest, including Tasks to "7.18.5"
2. Install the Vault Nickname plugin
3. Make git ignore the configure files for the Vault Nickname plugin

Motivation and Context

It's always good to have the latest plugins.

And I am fed up of opening the docs repo in my fork by mistake, when I wanted to open that vault in my main repo instead.

How has this been tested?

Locally on my Mac, in all 3 affected vaults.

I have configured the following vault nicknames in my clones of this repo (schemar was GitHub account of the Task plugin's original author, and I still use that folder name, as it is shorter than obsidian-tasks-group!)

Once this PR is merged, I will go to the local checkouts of my fork of this repo, and use my name as the prefix.
