Test out using araki shims in nebari

#13 adds the ability to setup shims in araki. To ensure that this approach to forcing users into using araki for environment management is sound, try out deploying this to a local nebari instance.

It would be helpful to also write up some notes about how this effects the nebari user experience.

Note, changes to the nebari jupyter image will use pixi instead of conda for bootstrapping the environment. We'll need to do some validating that this shim approach works with these changes.
