Refactor git samples

Note: Im adding a WIP label for now, just to get first some feedback on these changes.

This covers around 80% of #366

This PR does the following:

• Moves all runtimes (except Java) into the new shipwright repos, these are:
  • https://github.com/shipwright-io/sample-php
  • https://github.com/shipwright-io/sample-ruby
  • https://github.com/shipwright-io/sample-nodejs
  • https://github.com/shipwright-io/sample-go
  • https://github.com/shipwright-io/sample-java
• Now the sample codes are very minimal, this should provide better times when running e2e tests
• Fixes some failing unit tests.

Commits can be squashed, let me know.
