[FEATURE] Implement e2e Testing #162

Is your feature request related to a problem or use-case? Please describe.
The Triggers project currently does not have an e2e test configured.
Describe the solution that you would like.
Triggers should at minimum have the following e2e test as part of its CI suite:
- Deploy the current "maximum" supported versions of Kubernetes and Tekton
- Deploy the latest Shipwright Build release
- Install Triggers
- Run black box e2e tests of supported Triggers functionality.
Describe alternatives you have considered.
Leave the current unit + integration test suites as is.
