Integrate with rio-stac-io?

I just learned about https://github.com/planetlabs/rio-stac-io which wraps GDAL operations and really seems like the right way to mosaic together rasters 😍 

I am not quite sure what the integration would be, or whether it belongs in xpystac or its own xarray backend.
