docs: Add Remote Hub Catalogs configuration documentation

Changes

Added documentation for configuring custom remote hub catalogs in Pipelines as Code settings. This enables users to configure custom hub catalogs using the catalog-{INDEX}-* settings pattern.

Documentation includes:

• Remote Hub Catalogs section explaining the 4 required fields:
  • catalog-{INDEX}-id
  • catalog-{INDEX}-name
  • catalog-{INDEX}-url
  • catalog-{INDEX}-type
• Example for configuring a single custom hub catalog
• Example for configuring multiple hub catalogs
• How to reference tasks from custom catalogs using catalog ID prefix

Updated files:

• docs/TektonConfig.md
• docs/OpenShiftPipelinesAsCode.md

This doc update is related to PR #3036
