fix: atomic floating pane issues with the about screen

This fixes two minor issues:

1. In the about plugin, when centering the plugin we also make sure the floating panes surface is toggled on (otherwise it just appears as if the plugin disappears)
2. When atomically showing floating panes, we make sure all clients have a focused pane to avoid invalid state
