Fix artifact control plane vs model control plane GIF links in docs

• we were linking to the wrong GIF
• we had mcp_walkthrough.gif and mcp-walkthrough.gif and we were linking to the wrong one.
• Deleted the now no-longer-used gif and made our artifact control plane gif refer to the dcp_walkthrough.gif instead.
